Our country house hotel bar offers everything to everyone; day and night. John Brandon, joined The Elms hotel, restaurant and spa as Head Chef in May this year, bringing an inspiring, fine dining pedigree with him. Having loved cooking from a very young age – often out of necessity because his mother did not – John started his impressive career at The Savoy in London, taking up an apprenticeship at 16 years old. Training there for the next three years, John went on to chef at many notable hotels and restaurants across Europe including Nogay Hilton in Geneva; Genotier in Annecy, France; Sienna in Tuscany; L’Orangere, St James Street, London and many restaurants amongst The Conran Group.

Now, John is happily settled at The Elms and the culinary results are making quite a stir in the locality. “Our food and ethos is simple,” he says. “Fresh, seasonal, local and sustainable. Our vegetables come from our kitchen garden or from The Vale of Evesham. Our meat is only from the best suppliers in the UK and our fish is caught in UK waters and landed in Newlyn or Brixham. We use Cotswold white chicken from Worcestershire and our eggs – free range and organic – come from a farm near Ludlow. We only use seasonal produce from ethical suppliers.”

A three-course lunch is served in the Brookes restaurant daily in addition to fine dining every night. The menu is inspired by the best British tastes and constantly changing as John strives to push standards ever higher. His signature dish? “That would probably be roast skrie cod with braised peas, bacon, baby onions and lettuce. I particularly love the pastry section after many years as a pastry chef and I also love to cook with fish.”
